Carrot Cake & Cream Cheese Frosting

This cake is so good, and easy to make which makes it even more dangerous! It's perfect for any springtime get together or to just eat alone on the couch.



Cake Ingredients:

  • 2 cups all-purpose flour

  • 1 ½ tsp ground cinnamon

  • ½ tsp ground ginger

  • ½ tsp ground cloves

  • ½ tsp nutmeg

  • 1 ½ tsp baking soda

  • 1 tsp baking powder

  • ½ tsp salt

  • 1 cup canola oil

  • 1 cup granulated sugar

  • 1 cup light brown sugar

  • 4 large eggs

  • 1 tbsp vanilla extract

  • ¾ cup sour cream

  • 3 cups shredded carrots (around 5-6 carrots)

  • 1 ½ cups walnuts chopped

Frosting Ingredients:

  • ½ cup (2 sticks) butter, softened/room temp

  • 8 oz cream cheese, room temp

  • 4 cups powdered sugar

  • 1 tsp vanilla extract

  • 1 ½ tbsp honey

  • ½ cup chopped walnut for topping the cake with



Directions:

  1. Preheat the oven to 350 F, lightly grease and line the bottom of two 9-inch cake pans with parchment paper. 

  2. In a bowl mix, the all-purpose flour, baking powder, baking soda, salt, cinnamon, ginger, cloves, nutmeg until well combined.

  3. Either in a bowl with a whisk or with the kitchen aid, whisk the oil, granulated sugar, light brown sugar, eggs, and vanilla extract until well combined.

  4. Then alternating with the sour cream add the dry ingredients into the wet with your kitchen aid set to medium speed. Continue alternating until all the dry and sour cream are incorporated into the wet ingredients, mix until smooth and well combined. 

  5. Next shred your carrots, and chop your walnuts, then add them into the batter by folding them in. 

  6. Now evenly pour the cake batter into the two pans. Bake the cakes for 30-35 minutes or until a toothpick comes out cleanly. 

  7. Allow the cakes to cool. While they cool, make your icing. 

  8. In your kitchen aid add the butter and cream cheese, mix on high until smooth.

  9. Then add the vanilla extract and honey.

  10. Next add the powdered sugar one cup at a time. Once all the sugar is added, allow the frosting to mix for a few minutes until smooth. 

  11. Once the cakes are completely cooled, it's time to assemble the cake. Place the first cake layer on the plate and ice completely, leaving a slightly thicker layer on top. Then add the second layer on top and ice the rest of the cake, smoothing out the frosting.

  12. Once finished frosting, top the cake with the chopped walnut.
