This is one of my summer favorites---its always at the county fairs and a must! The fresh corn with the creamy coating and cheese is so good and hits the spot every time! Its easy to make, and will easily become one of your favorites too!
Ingredients:
4-6 corn on the cob
1 tbsp. olive oil
½ cup mayonnaise
⅓ cup sour cream
Zest and juice from one lime
½ tsp chili powder
½ tsp cayenne pepper
½ tsp paprika
½ tsp garlic powder
½ tsp onion powder
¼ cup chopped cilantro (half for topping, half for sauce)
½ cup crumbled cotija cheese
Chili powder for tipping
Directions:
Husk your corn---I like to just pull back the husk and leave it on it makes eating and dressing the corn easier. Rub olive oil on the corn then cook on the grill for 15-20 minutes, long enough to cook the corn and have some char.
While the corn cooks, make the crema--- in a bowl mix the sourcream, mayo, lime juice, lime zest, chili powder, paprika, cayenne pepper, garlic powder, onion powder, and half the chopped cilantro together, set aside.
Crumble up your cotija cheese and set to the side.
While the corn is still hot, brush the crema all over the corn to completely coat. Then sprinkle the cotija all over the corn and sprinkle it with chili powder and cilantro.
Then enjoy!
