These bad boys are addictive, they're crunchy and fresh and so fast and easy to make. They're great on their own but go well with ranch. They make the perfect quick snack, and since my garden is full of tomatoes its been a go to this week!
Ingredients:
3-4 Green tomatoes (preferably a beef steak)
½ cup flour
½ tsp paprika
½ tsp kosher salt
½ tsp pepper
½ cup panko bread crumbs
2 eggs
½ cup canola oil
Instructions:
Slice the tomatoes into ¼” slices.
Crack the eggs into a bowl and whisk them. Mix the flour, paprika, salt and pepper in a second bowl, and then pour the panko into a third bowl.
Form an assembly line, first dip the tomato slices into the egg, the flour, egg again, then the panko. Set them aside on a plate while you coat the rest.
Heat the oil in a pan, then fry the tomatoes for 1-2 minutes on each side (until golden).
Set aside for assembly.
