Warning this dressing is addictive, I make a jar every week to eat on my salad for lunch. Its so easy to make and you can customize it to your preferences, by adding more or less ginger. Its so refreshing and makes all salads tasty! You can also use it as a dipping sauce, I dip my spring rolls in it, give it a try!
Ingredients:
3 large carrots
¼ cup fresh ginger (peeled and chopped)
1-2 garlic cloves
½ cup avocado or canola oil
¼ cup rice vinegar (I use sesame rice vinegar)
2 tablespoons of soy sauce
¼ cup carrot juice (if you don't have carrot juice, can make without, just add a little water to get the consistency you like or leave it, and it will just be thicker)
1 tablespoon sesame oil (optional)
1 tablespoon agave
Directions:
First chop up your carrots, then peel and chop up your ginger, and peel your garlic clove.
Next measure out your ingredients and add them into a blender, begin blending until smooth, taste and add more ginger or carrot/carrot juice to your taste (more carrot will make it sweeter).
Then jar it up, and enjoy on salads, or as a dip!
