Potato pillows?! Say no more. These Gnocchi are the ultimate comfort food. The creamy sauce pairs so well with the fresh tomato, spinach and kale and makes you want to eat the entire pot. It's simple and easy to make, and it'll leave you happy with a full stomach!
Ingredients
8 oz. cherry/grape tomatoes
4 garlic cloves, chopped
½ cup or 8 tbs. Cream cheese
8-12 oz. fresh spinach
8 oz. Kale, deveined
½ cup Panko bread crumbs
17.5 oz. pack of pre-made Gnocchi (De Cecco makes a good one)
½ cup vegetable broth
4 tbsp. Butter
Salt
Pepper
Parmesan cheese

Directions:
First bring a medium pot of salted water to a boil. While that comes to a boil, halve the tomatoes, devein the kale and roughly chop it, and chop the 4 cloves of garlic.
Then in a large pan, melt 2 tbsp. of butter over medium heat. Add the Panko breadcrumbs, half the chopped garlic and cook, stirring until golden/toasted. Should take about 3-5 minutes. Transfer to a bowl add salt and pepper to taste and set to the side. Wipe out the pan.
Once the water is boiling add the gnocchi, once they rise to the top of the water they're done, take them out--takes about 2-4 minutes. Once cooked, set them in a bowl to the side.
In a large pan, melt 1 tbsp. butter on medium heat, add the rest of the garlic and cook for about 1 minute. Stir in ½ cup vegetable broth, ½ cup cream cheese and bring to a simmer, stirring until combined---about 3 minutes. Season with salt and pepper.
Next add tomatoes, spinach, and kale into the pan, cover with a lid and let cook for about 5-7 minutes---mixing occasionally.
Now mix the gnocchi into the pan, mix until coated in the sauce.
Then divide into bowls, top with the toasted bread crumbs and some freshly grated parmesan cheese.
