Italian Vegetable Bean Soup

Call me crazy but I love soup in the summer! Especially with all the fresh veggies from my garden. This one is a hearty, yet light summery soup that’ll make your taste buds sing! You can make this soup the way it is, or if your vegan/vegetarian its super easy to make it work for you. Just switch the sausage out for a sausage substitute (beyond, impossible), and switch the chicken broth to vegetable broth and you’re good to go. The recipe makes about 6 servings, and is so good re-heated so don’t worry if you have left-overs---but if you’re cooking for just a few just cut the recipe in half. I love making this on a rainy summer night, hope you guys enjoy!


Ingredients:

· 1 pack loose sausage meet (or sausage substitute)

· ¼ box orzo

· ¼ cup olive oil

· ½ sweet yellow onion, chopped


· 4 cloves garlic, finely chopped

· ¼ cup chopped parsley

· ½ tsp red pepper flakes

· 6 vine tomatoes, cut in fours

· 1 pint cherry tomatoes, cut in half

· 2 cubanelle green peppers, chopped

· 1 ½ cups small potatoes cut into fours

· 2-3 carrots peeled and sliced

· 2 stalks celery sliced

· 1 – 1 ½ cups barley

· 3, 32 oz chicken broths

· 1 green zucchini, cut into bite size pieces

· 6-8 large leaves of kale, de-veined

· 2 cups, packed spinach

· Juice of 1 lemon

· Salt and Pepper to taste


Directions:

· First heat up the oil in a large soup pot, then saute the garlic and onion, until onions are clear and slightly golden, then add the parsley.

· Next add the pack of loose sausage meat (or sausage substitute), cook sausage almost completely then add all the cut tomatoes. Cook for a couple minutes.

· Now add the carrots, celery, potatoes, peppers---- cook for a few minutes then add the chicken broth, pepper flakes, and lemon juice.

· Add the barley and let simmer for 40 minutes

· Now add the orzo, and zucchini, let cook for 10-12 minutes.

· Next add the spinach and kale (make sure to take the vein out of the kale)

· Let simmer for another 5-10 minutes.

· Next, Enjoy! Add salt and pepper to taste
