Mini Tomato Mozzarella Bakes

These tomato bakes are a comfort food for me, They can serve as an unconventional breakfast if you make them with an egg on top, as an appetizer at a dinner party or as a curl up on the couch comfort food. They're one of my go-tos when I cant think of what to make for dinner, they're easy and so delicious!



Mini tomato mozzerlla bake Ingredients:

  • 1-2 tbsp Olive oil

  • 5 Plum tomatoes (cut in quarters)

  • 16 oz cherry tomatoes (cut in halves)

  • 4-6 cloves garlic (peeled and crushed)

  • 1 1/2 cup chicken/vegetable broth

  • 1-2 tsp kosher salt

  • 1 tbsp Aleppo pepper

  • ½ tsp black pepper

  • 1 tsp paprika

  • 1 tbsp white vinegar

  • 1-1 ½ tsp white sugar

  • ¼ cup rough chopped fresh parsley

  • 16 oz fresh mozzarella (cut into 4 pieces)

  • Grated parmesan for topping

  • 4 eggs (can also do without)

Garlic Bread Ingredients:

  • 4-6 cloves minced garlic

  • Olive oil

  • 1 tsp kosher salt

  • 6-8 sliced bread of choice (I use sourdough or sunflower honey)



Instructions:

  1. Preheat the oven to 375 degrees Fahrenheit

  2. In a large saucepan, add the Olive oil, turn on medium heat, then add the crushed garlic, cook till fragrant; about 2 minutes.

  3. While the garlic cooks, cut the plum tomatoes into quarters and the cherry tomatoes into halves.

  4. Then add the tomatoes, kosher salt, black pepper, Aleppo pepper, and paprika, let cook covered on medium heat for about ten minutes.

  5. Then add the parsley, chicken/vegetable broth, vinegar, and sugar stir, cover and let cook on low heat for 40 minutes to an hour, stirring occasionally.

  6. While the sauce cooks, start the garlic bread, mince the garlic

  7. Then in a small pan add a couple tablespoons olive oil, on low heat cook the minced garlic and 1 tsp kosher salt for about 5 minutes. Then on a lined sheet pan, drizzle the bread slices with olive oil, then using a spoon scoop some of the garlic + oil onto each slice of bread and spread. Set bread aside till you place the casserole dishes into the oven.

  8. Once the tomato sauce has finished, fill your four mini casserole dishes a little more than ¾ full with the sauce, and add a chunk of mozzarella to the center of each. Place the casserole dishes onto a large sheet pan (makes it easier to move in and out of the oven)

  9. Now you can either sprinkle with parmesan and add to the oven for 10 minutes, OR crack one egg onto each dish sprinkle with parmesan, cover each with foil and add to the oven for 10 minutes. Also add the bread to the oven, and cook till crispy (about 4 minutes each side)

  10. After the ten minutes, turn the broiler on and cook them under the broiler for 1-2 minutes.

  11. Enjoy by dipping the bread into the sauce and cheese
