Who doesn't love Pasta? Am I right? This one is a favorite, it's packed full of flavor---earthiness from the mushrooms, a little heat from the pepper flakes and a creamy nuttiness from the cheese---oh so good! It's an ultimate comfort food and great after a long day at work! It takes no time at all, and you're in bed with your pasta watching Netflix in less than twenty minutes, hope you enjoy it!
Ingredients:
3 tbsp. butter
Olive oil
1 lb. cremini mushrooms
½ lb. Portobello mushrooms
Kosher salt
Black pepper
8 cloves garlic, minced
½ tsp red pepper flakes
1lb spaghetti
½ cup Parmigiano Reggiano or Pecorino Romano grated cheese
¼ cup fresh chopped parsley
Directions:
Bring a large pot of water with salt to a boil, cook pasta until al dente-- about 7-8 minutes.
While the pasta is cooking, cook your mushrooms---heat 1 tbsp. of butter and about 1tbsp olive oil in a large pan. Add the mushrooms---season with kosher salt and black pepper, sauté the mushrooms until browned and tender about 7 minutes.
Next add ½ the chopped parsley, the minced garlic, red pepper flakes, and the rest of the butter (2 tbsp.) to the pan- sauté for about 3-5 more minutes.
When pasta is ready---drain and reserve 1 cup of the pasta water. Add the pasta and water to the mushrooms, mix thoroughly. Then add the grated cheese to the pan and mix until cheese is melted and the sauce thickens.
Add the fresh parsley and toss the pasta.
Serve with a sprinkle of grated cheese and fresh parsley on top.
