Shrimp Piccata

This is the perfect date night meal! Its absolutely delicious and an easy recipe to make with a partner, give this one a try for your next date night whether its with a partner or your pup!



Ingredients:

-1 box Pappardelle pasta

-Zest from 2 lemons

-Juice from 4-5 lemons

-2 cups chicken/vegetable broth

-½ cup white wine

-2 tsp paprika

-2 tsp Aleppo pepper

-2 tsp kosher salt

-1-1 ½ tsp sugar

-6 garlic cloves minced

-¼ cup flour (possibly a little more)

-¼- ½ cup chopped fresh parsley

-10-15 raw cleaned and shelled shrimp

-Olive oil


Optional Ingredients:

-¼ cup capers

-2 cups kale or spinach



Instructions:

  1. Bring a large pot of salted water to a boil, cook the pasta according to the box, when finished cooking strain and lightly drizzle with olive oil to avoid sticking.

  2. In a large skillet drizzle olive oil (about a tablespoon) turn on medium heat, once oil is heated add the minced garlic, paprika, aleppo pepper, and kosher salt and cook on medium stirring for about 2 minutes.

  3. Then add the lemon juice, lemon zest, chicken/veggie broth, white wine, and sugar. Allow to cook on medium-low heat for 5-7 minutes.

  4. Then add the ¼ cup flour into a small bowl, and add some water to create a slurry (will prevent clumps), add the slurry into the sauce and whisk, the sauce should thicken up. If you want it thicker you can create another slurry and add until it is at desired thickness.

  5. Add the fresh chopped parsley

  6. Add the capers, kale or spinach into the sauce, cover and allow to cook for 8-10 minutes, if you aren't adding those cover sauce and cook for about 5 minutes.

  7. Then add the raw shrimp into the sauce and cook for 4-5 minutes, then turn off the heat.

  8. Add your cooked pasta into the pot and mix.

  9. Serve and enjoy!
