It's chili time! If you're looking for a quick dinner or an easy meal prep for the week this is the recipe for you! This chili is super healthy and packed with protein and nutrients and is oh so delicious! I like to make it with turkey, but you can replace it with any ground meat you prefer or even a meat substitute like vegan chorizo or jackfruit.
Ingredients:
1 lb ground turkey
1 yellow onion
2-3 cloves garlic
4 cubanelle peppers or 2 belle peppers (or a mix)
1 bag frozen sweet corn
1 can black beans
1 can kidney beans
½ to 1 jalapeno (add according to your spice level)
1 can of crushed tomatoes
1 can of stewed tomatoes or diced tomatoes (fill up with water twice and add aswell)
1 tsp chili powder
2 tsp cumin
1 tsp red pepper flakes
1 tsp paprika
1-2 tsp cocoa powder
1 tsp adobo
Olive Oil
Queso fresco/cheddar (optional for topping)
Sour cream (optional for topping)
Ingredients
First add some oil to the pot you'll be cooking the chili in, let it heat up then add the ground turkey, cook completely.
Next, while the turkey is cooking, do your chopping, dice the yellow onion, garlic cloves, and chop the peppers into small pieces.
Once the turkey is done cooking, remove it from the pot and set aside.
In the same pot add a drizzle of olive oil, heat up, then add the onion. Allow the onion to cook on medium heat until translucent (about 6-8 minutes).
Then add in your garlic and peppers and allow to cook for about 5 minutes.
Now add in the cooked turkey, black beans, kidney beans, cans of tomatoes, two tomato cans worth of water, and spices. You can adjust the spice levels to your taste.
Mix it all up and cook on low heat covered for about an hour.
Once done, portion into bowls and top with your favorite toppings. I usually top with crumbled queso fresco and sourcream.
